Finca Casa de Piedra is one of two farms operated by Café Directo, a family business founded in 2013 by the father-daughter team Gerardo and Jennifer Arias. The farm is dedicated to the production, processing and marketing of the finest Costa Rican Tarrazú coffee in harmony with the environment. Directo’s vision is to contribute to the development of society through fair and ethical trade.
The founders have over thirty years of experience in the production and processing of specialty coffee grades from micro-lots, including natural, yellow, red and black honey, anaerobic, semi-washed and fully washed processes.
The unique conditions of the farm – especially its microclimate and soil type, as well as altitudes up to 1,800 meters above sea level – allow a great variety of varieties to flourish, including Catuai, Pacamara and Gesha.
The process
The cherries are selectively harvested by hand to choose only the ripest ones. They are then separated by flotation to further select only the densest and highest quality cherries for processing.
These cherries are de-pulped, fermented and washed, followed by drying on a mixture of raised beds and patios for an average of 8 days.
After drying, the coffee rests in parchment before secondary processing on the farm (peeling, sorting, grading).
