This is a Colombian coffee that is decaffeinated with high quality that blurs the difference between coffee with or without caffeine.

Regions of origin
Our decaf comes from various farmers in the world-famous Huila and Tolima regions of southwest Colombia. By using their own all-natural decaffeination processes, they preserve both the local economy and all the flavor in the cup.

Natural Decaffeination Process
Decaffeination is done using a natural solvent consisting of a combination of natural extracts from sugar cane, beets, blackberries and vinegar. The beans are steamed, washed in the natural solvent to remove the caffeine and then dried to 10-12% moisture, just as they would have done before the process.

Ethyl acetate decaffeination (Sugarcane method)
Ethyl acetate decaffeination, commonly referred to as the ‘sugarcane’ method, is a process that combines high-altitude spring water and ethyl acetate (EA) of natural origin. EA is found naturally in every coffee cherry (as well as in many other fruits and vegetables). The natural EA is obtained from a sugarcane-based process and, together with the spring water, are the only elements that come into contact with the coffee.

The process in detail
First, the beans are steamed to open their pores, then they are repeatedly rinsed with ethyl acetate to remove the caffeine. They are then dried to a 10-12% moisture content and sealed with a natural wax that has a neutral profile that does not affect the taste or aroma of the coffee.

Preserved Coffee Quality
This water-EA process allows for a gentle extraction of the caffeine from the bean, avoiding excessive heat or pressure, and maintaining the natural texture and all the characteristics of the coffee bean. The result is a beautiful decaffeinated coffee to roast, which releases its sweetness very easily, resulting in a coffee that is extremely satisfying to brew, deeply sweet like demerara sugar, balanced with a soft baked malic acidity and a delicious russet tone.

Perfect for different occasions
It is a perfect coffee for a late afternoon flat white or an afternoon French press.
