Raw coffee from Aspenwall’s farms that gives a superbly smooth cup with heavy body, very low acidity, aromas of sandalwood and flavors of dark chocolate, nuts and earth. This coffee forms a rich and long-lasting crema in the cup.

The Process
Our green coffee monsooning process is carried out on the Malabar Coast, Mangalore, during the active southwest monsoon season (June-September) in high humidity. In this process, only ‘A/AA’ grade Arabica cherry/natural green coffee is spread in layers of 10-15 cm thickness on cement or tile floors in well-ventilated warehouses. The green coffee beans are subjected to frequent raking to ensure even exposure to the monsoon winds. This allows the beans to absorb moisture up to about 14-15%.

Later, the coffee is loosely packed in jute bags up to half the capacity without sewing and arranged in rows with enough space in between to allow free circulation of the monsoon air. This process is repeated until the desired monsoon effect is achieved in the coffee. Throughout the process, the green coffee is continuously monitored to prevent mold and ensure even monsooning.

This monsooning process takes around 12-16 weeks. During the process, the coffee beans swell and change color from initially brown to pale yellow/gold straw colored. The coffee is manually polished, graded and sorted to ensure uniformity within the grade and fumigated during storage. The coffee is evaluated both physically and taste-wise to ensure monsooning standards are met in our partner’s well-equipped cupping laboratory.

About the supplier
The coffee comes from Aspinwall which was started in 1867 by an old English merchant, Mr. J.H.Aspinwall, in the coastal town of Cochin on the southwest coast of India. The Monsooning plant in Mangalore is a certified processing unit under the Rainforest Alliance.

Aspinwall also works with other customer-specific sustainable standards such as the Nespresso AAA program. Even Fairtrade organic standards for farmer consortia that help farmers to develop towards a better future are practices for these farms.
